Method
1. Line 2 clean baking sheets with parchment paper
2. Add unbleached flour, baking powder, baking soda and kosher salt to a clean medium bowl
3. Mix briefly until combined
4. Add unsalted butter, sugar and light brown sugar to a clean large mixing bowl
5. Cream until light and fluffy
6. Add egg and vanilla extract to a clean small bowl
7. Transfer eggs to dough
8. Beat until well combined - medium speed
9. Transfer dry ingredients to dough
10. Mix until combined
11. Add granola, pretzels, semisweet chocolate and pecan pieces to the dough
12. Mix together until well combined
13. Scoop dough onto 2 baking sheets and press down
14. Chill in freezer until firm - 20 min
15. Pre-heat oven - 190°C
16. Bake until golden brown - 13 min, 190°C
17. Transfer onto cooling rack
