Of all the cookies you will bake and eat during the holidays (and beyond), this is the one people will remember. They're fine and sandy like a sablé, but with a friendly, soft chew.

  • All purpose flour icon

  • Bittersweet chocolate icon

    METHOD


  • 1. Line 2 clean baking sheets with parchment paper
  • 2. Add all purpose flour, cocoa powder and baking soda to a clean medium bowl
  • 3. Whisk briefly until blended
  • 4. Add unsalted butter to a clean large mixing bowl
  • 5. Beat until creamy - paddle attachment
  • 6. Add granulated sugar, light brown sugar, sea salt and vanilla extract to the large mixing bowl
  • 7. Beat - 2 min, medium speed
  • 8. Transfer dry ingredients to dough
  • 9. Mix until just combined - low speed
  • 10. Add bittersweet chocolate to a clean small bowl
  • 11. Mix chocolate mixture into dough
  • 12. Turn out on lightly-floured surface
  • 13. Divide into halves
  • 14. Shape
  • 15. Wrap with plastic wrap
  • 16. Chill in fridge - 3 hr
  • 17. Pre-heat oven - 160°C
  • 18. Cut into rounds
  • 19. Transfer dough to 2 baking sheets
  • 20. Bake - 12 min, 160°C, middle rack
  • 21. Transfer onto cooling rack
