  4. Add powdered sugar
  5. Whisk briefly then set aside
  6. Get a clean large mixing bowl
  7. Add egg white
  8. Add cream of tartar
  9. Add salt
  10. Whisk on medium speed until foamy
  11. Whisk on high speed until soft peaks form
  12. Get a clean small bowl
  13. Add granulated sugar
  14. Whisk sugar mixture into batter gradually
  15. Add vanilla extract
  16. Add almond extract
  17. Whisk until stiff peaks form
  18. Fold dry ingredients into batter bit by bit
  19. Transfer batter to tube pan
  20. Bake for 35min until springy to touch
  21. Let cool
