Beef Short Ribs with Ginger-Mango Barbecue Sauce

    METHOD


  • 1. Add onion, beef short ribs and beef stock to the inner pot
  • 2. Close and lock the lid and turn the steam release handle to Sealing
  • 3. Pressure cook - Meat, High, 1 hr
  • 4. Add mango, ginger and barbecue sauce to a clean saucepan
  • 5. Simmer until thick - approx 25 min
  • 6. Release pressure - Quick venting
  • 7. Remove short ribs from Inner Pot to serving plates
  • 8. Stir mango into the inner pot
  • 9. Season to taste
  • 10. Skim fat from cooking liquid
  • 11. Pour sauce over meat
