This is one of my husband's favorite desserts. I made him this for Valentine's Day when we first started dating, with fresh strawberries and strawberry fluid gel. It was love at first bite!

    Ingredients

  • Water icon

  • Silver leaf gelatin sheet icon

  • Heavy cream icon
    Heavy cream500 g
  • Granulated sugar icon
    Granulated sugar225 g
  • Vanilla bean icon
    Vanilla bean½scraped, halved
  • Buttermilk icon
    Buttermilk600 g
    Method

  • 1. Fill a clean large mixing bowl with ice water
  • 2. Bloom silver leaf gelatin sheet the water until softened and set aside
  • 3. Add heavy cream, granulated sugar and vanilla bean to a clean saucepan
  • 4. Heat until boiling and turn off heat
  • 5. Transfer gelatin to the cream-sugar mixture and whisk until dissolved
  • 6. Whisk buttermilk into mixture
  • 7. Strain with sieve
  • 8. Divide evenly between 8 ramekins
  • 9. Chill mixture in fridge until set - approx 6 hr
  • 10. Decorate with fruit or a fruit gel and serve
