Butterfruit Margarita Cookies

By Laura Wooley Published: April 07, 2016 Not-so-fun fact: Avocados are named after the Aztec word for testicle. Actual fun fact: In some parts of the world, avocados are called butterfruit. The good thing about this name is that it a) has nothing to do with testicles and b) provides a sneaky way to name your cookies without people realizing that there’s avocado in them until after they’ve eaten one and fallen in love with it. Everyone already knows that avocado and lime are delicious together and using avocado in the icing gives it a natural green tint. And if you’re wondering: yes, the cookies are also slightly green on the first day. After a night in a tupperware container, the avocado oxidizes and the cookies fade to a normal brown color. The icing – I’m happy to report – stays nice and green. 1. Get a clean medium bowl 2. Add white flour 3. Add arrowroot powder 4. Add baking powder 5. Add salt 6. Mix until combined then set aside 7. Get a clean stand mixer bowl 8. Add avocado 9. Add butter 10. Cream until smooth 11. Add white sugar 12. Mix until combined 13. Add egg 14. Add egg white 15. Add vanilla extract 16. Add almond extract 17. Mix until well combined 18. Transfer one third of dry ingredients to stand mixer bowl 19. Mix until combined 20. Transfer one third of dry ingredients to stand mixer bowl 21. Mix until combined 22. Transfer the rest of dry ingredients to stand mixer bowl 23. Mix until combined 24. Cover with kitchen towel 25. Chill in fridge for approx 1h until hard 26. Get a clean stand mixer bowl 27. Add cream cheese 28. Add avocado 29. Cream until smooth 30. Add lime juice 31. Mix until combined 32. Add powdered sugar 33. Mix carefully until smooth 34. Transfer content of stand mixer bowl to baking sheet 35. Pre-heat 36. Roll stand mixer bowl 37. Bake baking sheet for 8min until lightly browned and let cool 38. Frost 39. Sprinkle with lime zest 40. Serve
