Method
1. Pre-heat oven - 170°C
2. Line a clean muffin pan with paper liners or parchment paper
3. Add salted butter, all purpose flour, light brown sugar, ground cinnamon and rolled oats to a clean medium bowl
4. Mix firmly until coarse crumbs form then set aside
5. Add salted butter to a clean small bowl
6. Heat in microwave or on the stove until melted and set aside
7. Add bananas to a clean large mixing bowl and mash with a fork
8. Add granulated sugar and egg to the large mixing bowl
9. Add melted butter and mix
10. Add all purpose flour, baking powder, baking soda and salt to a clean medium bowl
11. Whisk briefly until blended
12. Fold dry ingredients into the banana-egg mixture and mix gently until just combined
13. Spoon batter into muffin pan filling cups 2/3 full
14. Sprinkle with the streusel topping
15. Bake 22 min, 170°C until skewer tests clean
