If you are going to all the trouble of making Thai Tea...then why not go a step further and make Thai Tea Ice cream. It could totally be a thing!

    INGREDIENTS


  • Star anise pod icon
    Star anise pod

    10 (about 8 g)

  • Vanilla bean icon

    1 (about 3 g)

  • Golden caster sugar icon
    Golden caster sugar

    60 g (about ¼ cup)

  • Loose thai tea icon
    Loose thai tea

    60 g (about 25 cups)

  • Water icon
    Water

    500 g (about 2 cups)

  • Single cream icon
    Single cream

    400 g (about 1 ¾ cups)

  • Condensed milk icon
    Condensed milk

    200 g (about ¾ cup)

    METHOD


  • 1. Add star anise pod, vanilla bean, golden caster sugar, loose thai tea and water to the TM5 bowl
  • 2. Boil - approx 10 min, 100°C, speed 1
  • 3. Infuse - 15 min
  • 4. Strain
  • 5. Add single cream and condensed milk to the TM5 bowl
  • 6. Blend - approx 10 sec, speed 8
  • 7. Transfer content of TM5 bowl to large glass bowl and cover
  • 8. Chill in fridge
  • 9. Clean TM5 bowl with water
  • 10. Add single cream and condensed milk to the TM5 bowl
  • 11. Mix until stiff peaks form - approx 30 sec, speed 4
  • 12. Transfer content of large glass bowl to TM5 bowl
  • 13. Combine
  • 14. Transfer content of TM5 bowl to plastic container
  • 15. Freeze - 6 hr
