One thing is for sure, a stir fry makes a super quick and easy meal. Whether I’m in need of a fast mid-week meal or spending a Sunday afternoon doing some meal prep, stir fry is on high rotation in my kitchen. They are also a great way to use up all your left over veg at the end of a week, because #nowaste.

Step preview

  1. Pre-heat oven - 170°C
  2. Pre-Heat a large cast iron skillet on high heat
  3. Add extra virgin olive oil to a clean large cast iron skillet
  4. Add chicken breast to the large cast iron skillet
  5. Cook halfway
  6. Flip
  7. Cook until cooked through
  8. Add miso paste, tahini, honey, lemon and water to a clean small bowl
  9. Mix until combined
  10. Transfer content of large cast iron skillet to plate
  11. Heat large cast iron skillet - high heat
  12. Add extra virgin olive oil to the large cast iron skillet
  13. Add mixed vegetables, fresh chili, garlic clove and ginger to the large cast iron skillet
  14. Cook without stirring - approx 3 min
  15. Cook until just cooked while stirring occasionally - approx 3 min
  16. Remove
  17. Add tamari and cilantro to the large cast iron skillet
  18. Add brown rice to the clean plates
  19. Arrange chicken in 2 plates
  20. Transfer content of large cast iron skillet to 2 plates
  21. Serve dressing with 2 plates
