I love Browned Butter. I could seriously eat it in anything. It is just so delicious as a topping with these light fluffy pillows of carby goodness.

    INGREDIENTS


  • Parmesan cheese icon

    80 g (about ½ cup)cubed

  • Feta cheese icon

    100 g (about 1 cup)crumbled

  • Ricotta cheese icon

    300 g (about 1 ¼ cups)drained

  • Fresh basil icon

    80 g (about ¾ cup)

    250 g (about 1 cup)

    METHOD


  • 1. Add parmesan cheese to the TM5 bowl
  • 2. Blitz - approx 15 sec, speed 10
  • 3. Then add feta cheese, ricotta cheese, fresh basil and sea salt to the TM5 bowl
  • 4. Blend - approx 20 sec, speed 6
  • 5. Then add bread flour to the TM5 bowl
  • 6. Knead - approx 20 sec, dough
  • 7. Transfer content of TM5 bowl to medium bowl
  • 8. Cover
  • 9. Cool in fridge - 2 hr
  • 10. Line a clean baking sheet with kitchen towel
  • 11. Flour lightly
  • 12. Pre-heat oven - 160°C
  • 13. Add water and salt to a clean large saucepan
  • 14. Boil
  • 15. Roll dough into rounds
  • 16. Transfer dough to baking sheet
  • 17. Transfer dough to large saucepan bit by bit
  • 18. Boil until floating
  • 19. Keep warm in the oven until serving
  • 20. Add butter to a clean frying pan
  • 21. Boil in frying pan - medium-high heat
  • 22. Add fresh sage to the frying pan
  • 23. Cook in frying pan until crispy
  • 24. Drain with paper towels
  • 25. Transfer gnocchi to frying pan bit by bit
  • 26. Fry in frying pan until light golden
  • 27. Transfer gnocchi to serving plate
  • 28. Garnish with parmesan cheese and butter
