A cookie for everyone! Free from gluten, dairy, and refined sugar, but packed full of tasty almonds, coconut and cacao nibs. (Gluten-Free, Vegan)

    METHOD


  • 1. Pre-heat oven - 150°C
  • 2. Line 2 clean baking sheets with parchment paper
  • 3. Add coconut oil, maple syrup and vanilla extract to a clean saucepan
  • 4. Warm - low heat
  • 5. Add ground almonds, unsweetened shredded coconut, cacao nibs, almonds, baking soda and sea salt to a clean large mixing bowl
  • 6. Add orange to the batter
  • 7. Transfer wet ingredients to batter
  • 8. Mix until well combined
  • 9. Add almond milk to the batter
  • 10. Shape into rounds
  • 11. Transfer batter to 2 baking sheets
  • 12. Bake until golden brown - 12 min, 150°C
  • 13. Let cool - approx 10 min
