The perfect accompaniment to anything curry...bright, fragrant, and anti-inflammatory. Can’t do much better than that!

  • Mint leaves icon
    Mint leavesas neededchopped
  • Fresh chili icon
    Fresh chili1sliced
  • Basmati rice icon
    Basmati rice300 g
  • Saffron threads icon
    Saffron threads¼ teaspoon
  • Ground turmeric icon
    Ground turmeric2 teaspoons
  • Pink himalayan salt flakes icon
    Pink himalayan salt flakes2 teaspoons
  • Water icon
    Wateras needed
    Method

  • 1. Add basmati rice to the simmering basket
  • 2. Stir through saffron threads, ground turmeric and salt flakes with a fork. Insert into Thermomix bowl
  • 3. Pour the water over the top until you can just see it when tipping the Thermomix bowl on an angle
  • 4. Steam - 14 min, 100°C, speed 4
  • 5. Fluff rice with a fork
  • 6. Serve with the chopped mint and chillies
