Kaffir Lime Panna Cotta With Mango Salsa

One of my fave things is panna cotta. Silky, sweet and sort of a grown up jelly. This one has a beautiful fruity salsa to accompany it.

    INGREDIENTS


  • White chocolate icon

    150 g (about ¾ cup)broken up

  • Lime icon

    2 (about 200 g)zest of

    1 (about 180 g)sliced

  • Mint leaves icon

    1 (about 100 g)juice of

  • Milk icon

    120 g (about ½ cup)

  • Kaffir lime leaves icon

    3 (about 1 g)

  • Single cream icon

    300 g (about 1 ¼ cups)

  • Silver leaf gelatin sheet icon

    2 (about 5 g)

  • Water icon

  • Caster sugar icon
    Caster sugar

    1 teaspoon (about 4 g)

    METHOD


  • 1. Add milk, kaffir lime leaves and single cream to the TM5 bowl
  • 2. Cook - approx 8 min, 80°C, speed 3
  • 3. Let cool
  • 4. Remove
  • 5. Add white chocolate and lime to the TM5 bowl
  • 6. Add silver leaf gelatin sheet and water to a clean small bowl
  • 7. Soak - 5 min
  • 8. Squeeze
  • 9. Transfer gelatin to TM5 bowl
  • 10. Mix until dissolved - approx 20 sec, speed 5
  • 11. Transfer content of TM5 bowl to 6 drinking glasses and cover
  • 12. Chill in fridge - 12 hr
  • 13. Add mango, mint leaves, lime and caster sugar to a clean small bowl
  • 14. Mix with tablespoon
  • 15. Marinate in fridge - 20 min
  • 16. Transfer salsa to 6 drinking glasses
  • 17. Serve
