Layers of sweet orange and custardy vanilla make up this refreshing summery dessert. It's based on a retro Mexican favorite called "gelatina de leche."

    Method

  • 1. Add egg yolk, white sugar, milk and vanilla bean paste to the TM bowl
  • 2. Cook - 8 min, 80°C, speed 4
  • 3. Add gelatine and water to a clean small bowl
  • 4. Stir with tablespoon
  • 5. Transfer gelatin to TM bowl
  • 6. Blend with MC on - 20 sec, speed 6
  • 7. Pour into 8-10 small drinking glasses up to less than halfway
  • 8. Refrigerate until completely set, 2-3 hours
  • 9. To make the Orange Jelly, place half the orange juice, sugar and lemon juice into Thermomix bowl
  • 10. Cook with MC in place - 8 min, 80°C, speed 2
  • 11. Add gelatine and water to a clean small bowl
  • 12. Stir with tablespoon
  • 13. Transfer gelatin to TM bowl
  • 14. Blend - 20 sec, speed 6
  • 15. Add the remaining orange juice
  • 16. Stir gently to combine - 4 sec, speed 3
  • 17. Strain mixture and pour Orange Jelly carefully onto the Vanilla Milk Jelly
  • 18. Allow to set completely (2-3 hours) in the refrigerator before serving
