  • Canned corn icon

    Method

  • 1. Heat vegetable oil in a clean Dutch oven
  • 2. Add onion and cook until softened - 5 min
  • 3. Add red bell pepper and garlic
  • 4. Cook - 30 sec
  • 5. Pour canned chopped tomatoes into the mixture
  • 6. Season with salt & pepper
  • 7. Boil then reduce heat
  • 8. Simmer - 10 min
  • 9. Add canned black beans and canned corn to the mixture
  • 10. Cook until heated through - 4 min
  • 11. Top with sour cream
  • 12. Sprinkle with cilantro and cheddar cheese
  • 13. Serve with tortilla chips or with rice as a main
