    METHOD


  • 1. Add vegetable oil to a clean Dutch oven
  • 2. Heat
  • 3. Add onion to the Dutch oven
  • 4. Cook until softened - 5 min
  • 5. Add red bell pepper and garlic clove to the mixture
  • 6. Cook - 30 sec
  • 7. Pour canned chopped tomatoes into the mixture
  • 8. Season with salt & pepper
  • 9. Boil then reduce heat
  • 10. Simmer - 10 min
  • 11. Add canned black beans and canned corn to the mixture
  • 12. Cook until heated through - 4 min
  • 13. Divide
  • 14. Top with sour cream
  • 15. Sprinkle with cilantro and cheddar cheese
  • 16. Serve with tortilla chips
