Method
1. Pre-heat oven - 190°C
2. Line 2 clean muffin pans with paper muffin cups
3. Add cake flour and powdered sugar to a clean medium bowl
4. Whisk briefly and set aside
5. Add egg white, vanilla extract, cream of tartar and salt to a clean large mixing bowl
6. Beat until foamy - medium speed
7. Beat until soft peaks form - high speed
8. Add granulated sugar to a clean small bowl
9. Whisk sugar mixture into batter gradually and beat until stiff peaks form
10. Fold dry ingredients into batter gradually and mix until just combined
11. Transfer batter to 2 muffin pans
12. Bake until springy to touch - 10 min
13. Transfer onto cooling rack
14. Decorate with sieve
