A lightly spiced, sweet and comforting soup. Any winter squash can be used in place of the sweet potato.

Step preview

  1. Pre-heat
  2. Place a clean medium bowl on drop
  3. Add peeled, diced sweet potato
  4. Add olive oil
  5. Add coriander seeds
  6. Add cumin seeds
  7. Season with salt & pepper well
  8. Toss until coated
  9. Transfer potatoes to medium roasting dish
  10. Roast for 20min until soft
  11. Place a clean saucepan on drop
  12. Add olive oil
  13. Add chopped onion
  14. Add sliced garlic clove
  15. Add chili flakes
  16. Sauté for 15min on medium heat until soft and turn off heat
  17. Transfer potatoes to soup
  18. Replace on drop
  19. Add coconut milk
  20. Add vegetable stock
  21. Add lemongrass stalk
  22. Replace on medium heat
  23. Simmer for 15min
  24. Blend with stick blender until smooth
  25. Garnish with chopped cilantro
