Sweet, woodsy rosemary syrup puts simple syrup to shame in this version of the Gin Fizz. A really lovely long cocktail, especially when garnished with an extra sprig of rosemary.

Step preview

  1. Get a clean saucepan
  2. Add sugar
  3. Add water
  4. Heat until boiling
  5. Add fresh rosemary
  6. Stir gently until sugar has dissolved
  7. Let cool for 45min
  8. Strain with sieve and set aside
  9. Get a clean highball glass
  10. Add gin
  11. Add juice of lemon
  12. Transfer syrup to cocktail
  13. Stir until combined
  14. Add crushed ice
  15. Top with seltzer water
  16. Garnish with fresh rosemary
