Very Vanilla ‘Bean’ Fudge

Butter beans are the star ingredient of this healthy Thermomix bean fudge. This simple dessert recipe should be made well in advance, as it needs time to chill in the fridge to set.

  • Dark chocolate icon

    150 g (about ¾ cup)

  • Almonds icon

    200 g (about 1 ½ cups)

  • Vanilla bean paste icon
    Vanilla bean paste

    2 tablespoons (about 33 g)

  • Lima beans icon
    Lima beans

    400 g (about 1 ¾ cups)drained, rinsed

  • Coconut oil icon
    Coconut oil

    100 g (about ½ cup)

  • Sea salt icon
    Sea salt

    1 pinch

    METHOD


  • 1. Add coconut sugar, almonds and vanilla bean paste to the TM5 bowl
  • 2. Blend - approx 30 sec, speed 7
  • 3. Scrape down sides of TM5 bowl
  • 4. Add lima beans, coconut oil and sea salt to the TM5 bowl
  • 5. Blend until smooth - approx 40 sec, speed 8
  • 6. Transfer content of TM5 bowl to square pan
  • 7. Chill in fridge - 4 hr
  • 8. Drizzle with dark chocolate to taste
