  8. Heat gently until sugar has dissolved
  9. Remove

  11. Transfer content of saucepan to large mixing bowl
  12. Mix in baking soda
  13. Leave for 10min
  14. Add egg
  15. Whisk until smooth
  16. Add all purpose flour
  17. Add pumpkin pie spice
  18. Add ground ginger
  19. Add grated ginger
  20. Whisk until smooth
  21. Transfer batter to muffin pan
  22. Bake for 25min until skewer tests clean
  23. Let cool for 5min
  24. Turn out onto cooling rack
  25. Garnish
