Method
1. Line a clean square pan with parchment paper
2. Add oats, flaked coconut, chia seeds and ground flaxseed to a food processor bowl
3. Blitz until fine
4. Add medjool dates, peanut butter and honey to the food processor bowl
5. Mix in coconut oil to the mixture
6. Press the mixture into square pan
7. Chill in fridge
8. Add cocoa butter and honey to a clean medium glass bowl
9. Heat in double boiler until melted
10. Whisk in cocoa powder and mix until smooth
11. Pour chocolate mixture onto the cooled base
12. Sprinkle with pumpkin seeds
13. Chill in fridge until firm
14. Cut into bars
15. Wrap individually with plastic wrap and store in the fridge!
