Step preview

  2. Line a muffin pan
  3. Place red bell pepper on a medium roasting dish
  4. Drizzle with olive oil
  5. Season with salt & pepper generously
  6. Roast for 15min
  7. Get a clean large mixing bowl
  8. Add all purpose flour
  9. Add baking powder
  10. Add salt
  11. Add finely chopped fresh rosemary
  12. Season to taste
  13. Whisk briefly and set aside
  14. Get a clean medium bowl
  15. Add egg
  16. Add buttermilk
  17. Add sunflower oil
  18. Whisk until combined
  19. Transfer wet ingredients to batter
  20. Fold gently until combined
  21. Add grated parmesan cheese
  22. Add crumbled hard goat cheese
  23. Transfer roasted vegetables to batter
  24. Fold gently until combined
  25. Spoon batter into muffin pan
  26. Sprinkle with finely chopped walnuts
  27. Bake for 18min until skewer tests clean
