This beautiful dessert will be the centrepiece of any table! Perfect for a special occasion and of course Christmas. Be prepared to make it again.

  • Single cream icon

    350 g (about 1 ½ cups)

  • Egg yolk icon

    1 ⅜ tablespoons (about 22 g)

    200 ml (about 200 g)

    500 g (about 2 ¼ cups)

    METHOD


  • 1. Add sugar, cocoa powder, milk, sea salt and vanilla bean paste to the TM5 bowl
  • 2. Cook - approx 5 min, 90°C, speed 3
  • 3. Then add gelatine to the TM5 bowl
  • 4. Blend - approx 1 min, speed 6
  • 5. Transfer content of TM5 bowl to medium glass bowl
  • 6. Cool slightly on round wire rack
  • 7. Set in fridge
  • 8. Add white chocolate, milk, single cream, egg yolk and vanilla bean paste to the TM5 bowl
  • 9. Cook - approx 8 min, 80°C, speed 4
  • 10. Cook - approx 3 min, 90°C, speed 4
  • 11. Heat
  • 12. Add hot coffee to a clean heatproof bowl
  • 13. Dip sponge fingers into the heatproof bowl one by one
  • 14. Transfer half of content of heatproof bowl to medium glass bowl
  • 15. Layer with strawberries
  • 16. Transfer content of TM5 bowl to medium glass bowl
  • 17. Set in fridge
  • 18. Transfer content of heatproof bowl to medium glass bowl
  • 19. Layer with strawberries
  • 20. Clean TM5 bowl
  • 21. Add mascarpone cheese, single cream and vanilla bean paste to the TM5 bowl
  • 22. Whisk until peaks form - approx 10 sec, speed 4
  • 23. Transfer content of TM5 bowl to medium glass bowl
  • 24. Refrigerate in fridge - 3 min
  • 25. Decorate with dark chocolate
  • 26. Serve
