Truly delicious little pots of decadence...treat with respect...then go to the gym as penance. Simple in the extreme but a little bit fancy.

    INGREDIENTS


  • Golden caster sugar icon
    Golden caster sugar

    1 cup (about 204 g)

  • Water icon
    Water

    2 tablespoons (about 30 ml)

  • Vanilla extract icon
    Vanilla extract

    1 tablespoon (about 15 ml)

  • Milk icon
    Milk

    100 g (about ½ cup)

  • Whipping cream icon
    Whipping cream

    100 g (about ½ cup)

  • Egg yolk icon
    Egg yolk

    4 (about 80 g)

    METHOD


  • 1. Add golden caster sugar, water and vanilla extract to a clean saucepan
  • 2. Cook until sugar has dissolved - medium-low heat
  • 3. Heat until boiling
  • 4. Stir constantly
  • 5. Boil until caramelized
  • 6. Pour caramel into baking sheet
  • 7. Let cool until hard
  • 8. Break into pieces
  • 9. Get the TM5 bowl
  • 10. Transfer caramel to TM5 bowl
  • 11. Add vanilla extract, milk, whipping cream and egg yolk to the TM5 bowl
  • 12. Cook - approx 8 min, 80°C, speed 4
  • 13. Cook - approx 2 min, 90°C, speed 4
  • 14. Transfer content of TM5 bowl to 4 jars
  • 15. Chill in fridge until set
  • 16. Serve
