    2 tablespoons (about 30 ml)

  • Green bell pepper icon

    1 (about 150 g)chopped

  • Summer squash icon

    1 (about 196 g)chopped

  • Garlic clove icon

    2 (about 12 g)chopped

  • Olive oil icon

    1 tablespoon (about 15 ml)

  • Cayenne pepper icon

  • Parmesan cheese icon

    ¼ cup (about 38 g)grated


  • 1. Pre-heat oven - 230°C
  • 2. Add egg and heavy cream to a clean large mixing bowl
  • 3. Whisk together and set aside
  • 4. Add green bell pepper and summer squash to a clean medium bowl
  • 5. Sauté vegetables in large cast iron skillet until just cooked
  • 6. Add garlic clove and olive oil to the large cast iron skillet
  • 7. Transfer eggs to large cast iron skillet
  • 8. Season with cayenne pepper lightly
  • 9. Stir gently and heat until halfway done
  • 10. Bake - 3 min, 230°C
  • 11. Sprinkle with parmesan cheese
  • 12. Serve
