    Method

  • 1. Pre-heat oven - 230°C / 445°F
  • 2. Add egg and heavy cream to a clean large mixing bowl
  • 3. Whisk together and set aside
  • 4. Sauté green bell pepper and summer squash in large cast iron skillet until just cooked
  • 5. Add garlic clove and olive oil
  • 6. Pour the eggs over the veggies
  • 7. Season with cayenne pepper lightly
  • 8. Stir gently and heat until halfway done
  • 9. Bake - 3 min, 230°C / 445°F
  • 10. Sprinkle with parmesan cheese
  • 11. Serve
