    METHOD


  • 1. Add brown sugar, sea salt, onion granules, chili flakes, fresh rosemary, bay leaves, white pepper, black peppercorns, allspice, chili flakes and dry white wine to the TM5 bowl
  • 2. Fit TM5 bowl to TM5
  • 3. Mix with MC in place - approx 10 sec, speed 6
  • 4. Add turkey to a clean large resealable plastic bag
  • 5. Pour mixture into meat
  • 6. Marinate in fridge - approx 24 hr
  • 7. Pre-heat oven - 174°C
  • 8. Rinse with water
  • 9. Pat dry with paper towels
  • 10. Transfer meat to large roasting dish
  • 11. Stuff orange and fresh thyme into the meat
  • 12. Add unsalted butter, bourbon, maple syrup, orange juice and fresh thyme to the TM5 bowl
  • 13. Heat - approx 10 min, 100°C, speed 1
  • 14. Transfer half of mixture to meat
  • 15. Insert
  • 16. Cook - 1 hr, 174°C
  • 17. Transfer mixture to meat
  • 18. Reduce - 160°C
  • 19. Cook - 2 min 30 sec, 160°C
  • 20. Baste continuously with tablespoon
  • 21. Remove
  • 22. Let rest on surface - 20 min
  • 23. Garnish with orange, pomegranate and bay leaves
  • 24. Slice
  • 25. Serve
