These quinoa hash browns are a weekend ritual. They're made from grated potatoes and quinoa, cooked in a little butter and garnished with chopped green onions.
Ingredients
Quinoa65 g
Water160 g
Potato360 ggrated
Egg1
Sea salt1 teaspoon
Black pepper¼ teaspoon
Unsalted butter7 g
Method
1. Add quinoa and water to a clean saucepan
2. Heat until boiling, simmer and set aside - 10 min
3. Let cool completely, then transfer quinoa to large mixing bowl
4. Add potato, egg, sea salt and black pepper
5. Mix together until combined
6. Melt unsalted butter in the large cast iron skillet
7. Scoop hash brown mixture onto large cast iron skillet
8. Flatten and fry the hash browns for 5-7 minutes on each side
9. Serve
