Method
1. Add potato to a clean large mixing bowl
2. Salt generously then set aside
3. Let rest - 20 min
4. Line a bowl with a clean dishtowel, squeeze dry, discard water, and return to bowl
5. Add onion to the potatoes
6. Add unsalted butter to a clean small glass bowl
7. Melt in microwave
8. Transfer content of small glass bowl to potatoes
9. Season with salt & pepper to taste
10. Mix well
11. Add canola oil to a clean medium cast iron skillet
12. Press tablespoons of potatoes together into loose patties
13. Fry in the hot oil for about 4 minutes on each side, or until desired crispness
14. Drain on paper towels
15. Serve immediately
