I love this salad. It ticks so many boxes. Pretty, tasty, spicy, good for you, gluten free. Instagram worthy! Gotta love it! I know you will.

  • Lime icon

    2 (about 200 g)juiced

    1 headstalks of, coarsely chopped

  • Peanuts icon

    ¼ cup (about 37 g)roasted

  • Wild rice icon

    200 g (about 1 cup)

  • Water icon

    1 L (about 4 ¼ cups)

  • Red onion icon

    ½ (about 68 g)diced

  • Mango icon

    2 (about 360 g)peeled, diced

  • Fresh chili icon

    2 (about 40 g)deseeded, finely chopped

  • Orange icon

    2 (about 400 g)

  • Cilantro icon

    1 headcoarsely chopped

  • Scallion icon

    2 (about 30 g)sliced

  • Extra virgin olive oil icon

    100 g (about ½ cup)

    50 g (about 2 ¾ tablespoons)

  • Coconut sugar icon

    20 g (about 1 ⅝ tablespoons)

    METHOD


  • 1. Add wild rice and water to the simmering basket
  • 2. Steam - approx 30 min, 100°C, speed 4
  • 3. Drain
  • 4. Transfer content of simmering basket to large mixing bowl
  • 5. Add red onion, mango and fresh chili to the large mixing bowl
  • 6. Peel orange to the large mixing bowl
  • 7. Add cilantro and scallion to the large mixing bowl
  • 8. Toss until well combined
  • 9. Add extra virgin olive oil, tamari, lime, coconut sugar and cilantro to the TM5 bowl
  • 10. Blend - approx 10 sec, speed 10
  • 11. Pour dressing into large mixing bowl
  • 12. Top with peanuts
  • 13. Serve
