A very delicious easy weeknight or weekend meal, made to order as they come in from where-ever!! If you don’t have time to make the cheese, don’t!

  • Parmesan cheese icon

    85 g (about ½ cup)cubed

  • Button mushroom icon

    100 g (about 3 ⅓)coarsely chopped

    METHOD


  • 1. Add parmesan cheese and garlic clove to the TM5 bowl
  • 2. Chop - approx 10 sec, speed 10
  • 3. Scrape down sides of TM5 bowl
  • 4. Add ricotta cheese, sea salt and black pepper to the TM5 bowl
  • 5. Chop - approx 1 sec, speed 6
  • 6. Transfer content of TM5 bowl to small bowl
  • 7. Add button mushroom, scallion, fresh parsley, red bell pepper and butter to the TM5 bowl
  • 8. Blend - approx 2 sec, speed 4
  • 9. Scrape down sides of TM5 bowl
  • 10. Sauté - approx 5 min, Varoma, speed 1
  • 11. Pre-heat a clean frying pan - medium heat
  • 12. Drizzle with extra virgin olive oil generously
  • 13. Add flour tortilla to a clean work surface
  • 14. Transfer half of cheese mixture to tortillas
  • 15. Transfer content of TM5 bowl to tortillas
  • 16. Transfer cheese mixture to tortillas
  • 17. Fold and press down
  • 18. Transfer tortillas to frying pan
  • 19. Fry one by one in frying pan
  • 20. Slice into quarters
  • 21. Garnish with cilantro
  • 22. Top with lime
  • 23. Serve
