  1. Pre-heat
  2. Prepare 2 round pans with parchment paper
  3. Get a clean medium bowl
  4. Add egg white
  5. Whisk until stiff
  6. Get a clean large mixing bowl
  7. Add all purpose flour
  8. Add baking powder
  9. Add salt
  10. Whisk briefly
  11. Get a clean large mixing bowl
  12. Add unsalted butter
  13. Add granulated sugar
  14. Cream together
  15. Add egg yolk
  16. Add coconut milk
  17. Whisk until combined
  18. Add one third of dry ingredients to batter
  19. Mix in buttermilk
  20. Mix the rest of dry ingredients into batter
  21. Add unsweetened shredded coconut
  22. Fold egg whites into batter
  23. Transfer batter to 2 round pans
  24. Bake for 40min until golden brown
  25. Let cool completely
  26. Get a clean medium bowl
  27. Add orange juice
  28. Add zest of orange
  29. Mix in honey
  30. Add halved peach
  31. Mix briefly
  32. Transfer fruit to medium roasting dish
  33. Bake for 35min until soft
  34. Let cool
  35. Get a clean large mixing bowl
  36. Add heavy cream
  37. Mix in powdered sugar
  38. Whip well
  39. Fold coconut cream
  40. Cut cake into halves
  41. Assemble
  42. Sprinkle with toasted flaked coconut
  43. Slice
