Method
1. Add parmesan cheese to the TM5 bowl
2. Blend with MC in place - approx 10 sec, speed 10
3. Scrape down sides of TM5 bowl
4. Remove from bowl and set asideTransfer content of TM5 bowl to small bowl
5. Add butter and leek to the TM5 bowl
6. Chop with MC in place - approx 5 sec, speed 5
7. Scrape down sides of TM5 bowl
8. Sauté - approx 5 min, Varoma, speed 2
9. Then add cauliflower and vegetable stock to the TM5 bowl
10. Cook - approx 15 min, 100°C, speed 2
11. Then add single cream and parmesan
12. Purée with MC in place - approx 1 min, speed 5
13. Then season with salt & pepper
14. Serve immediately garnished with chives and cheese on toast
