A healthy and colourful granola with lots of good stuff in it. Makes a nice big batch. Serve with yogurt and fresh fruit or munch it on it's own for a snack.

    METHOD


  • 1. Add jumbo oats, almonds, sunflower seeds, pumpkin seeds, chia seeds, shredded coconut, ground cinnamon and sea salt to a clean large mixing bowl
  • 2. Mix together
  • 3. Add coconut oil, vanilla extract, almond extract and maple syrup to a clean small bowl
  • 4. Mix
  • 5. Transfer oil mixture to oat mixture
  • 6. Mix together
  • 7. Transfer oat mixture to 2 baking sheets
  • 8. Prepare with parchment paper
  • 9. Spread evenly
  • 10. Bake - 40 min, 150°C
  • 11. Let cool - approx 5 min
  • 12. Transfer content of baking sheets to plastic container
  • 13. Mix in dried apricots and goji berries to the plastic container
  • 14. Serve
