    Method

  • 1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl
  • 2. In a separate bowl, whisk together the coconut oil or butter, egg, and vanilla
  • 3. Stir in the maple syrup and add in the flour mixture, stirring just until incorporated
  • 4. Fold in the apple
  • 5. Chill in fridge - 30 min
  • 6. Pre-heat oven - 160°C / 325°F
  • 7. Line a clean baking sheet with parchment paper
  • 8. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly
  • 9. Bake - 14 min, 160°C
  • 10. Cool on the pan for 10 minutes before turning out onto a wire rack
  • 11. Serve
