Method
1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl
2. In a separate bowl, whisk together the coconut oil or butter, egg, and vanilla
3. Stir in the maple syrup and add in the flour mixture, stirring just until incorporated
4. Fold in the apple
5. Chill in fridge - 30 min
6. Pre-heat oven - 160°C / 325°F
7. Line a clean baking sheet with parchment paper
8. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly
9. Bake - 14 min, 160°C
10. Cool on the pan for 10 minutes before turning out onto a wire rack
11. Serve
