Step preview

  1. Get a clean medium bowl
  2. Add cashew nuts
  3. Cover with water then set aside
  4. Soak for 1h
  5. Line a muffin pan with parchment paper
  6. Get a clean medium bowl
  7. Add pitted dates
  8. Cover with warm water then set aside
  9. Soak for 15min
  10. Drain with sieve
  11. Add almonds
  12. Blend together until fine
  13. Press mixture into muffin pan firmly
  14. Place in freezer for 30min
  15. Get a clean medium bowl
  16. Add coconut milk
  17. Add melted coconut oil
  18. Add maple syrup
  19. Add juice of, zest of lemon
  20. Drain nuts with sieve
  21. Transfer nuts to cheese mixture
  22. Blend until smooth
  23. Spoon cheese mixture into muffin pan
  24. Add blackberries
  25. Chill in freezer until set
