Step preview

  1. Get a clean medium bowl
  2. Add canned tomatoes
  3. Add water
  4. Get a clean large saucepan
  5. Add olive oil
  6. Add diced onion
  7. Add chopped fennel bulb
  8. Add chopped celery stalk
  9. Add sliced ginger
  10. Add minced garlic
  11. Add fennel seeds
  12. Add coriander seeds
  13. Add ground cumin
  14. Add chili flakes
  15. Add cloves
  16. Season with salt & pepper
  17. Sauté for 15min on low heat
  18. Transfer tomatoes to sauce
  19. Simmer for approx 20min until thick
  20. Get a clean small bowl
  21. Add brown sugar
  22. Add white vinegar
  23. Transfer mixture to sauce
  24. Blend with stick blender until smooth
  25. Simmer for approx 15min until thick while stirring occasionally
  26. Transfer sauce to 2 jars
