A perfect summer pie, oozing with a tart cherry-red filling and topped with a glossy golden crust. We recommend our Basic Pie Crust for the base, but store-bought pie crust works in a pinch.

  4. Let rest for 30min
  5. Roll out basic pie crust
  6. Line a pie dish
  7. Pre-heat
  8. Drain large mixing bowl
  9. Retrieve large mixing bowl
  10. Add brown sugar
  11. Add cornstarch
  12. Add ground cinnamon
  13. Add juice of lemon
  14. Mix together until combined
  15. Transfer filling to pie dish
  16. Cover
  17. Trim
  18. Get a clean small bowl
  19. Add egg yolk
  20. Add heavy cream
  21. Whisk briefly until combined
  22. Brush pie
  23. Bake for 10min
  24. Reduce
  25. Bake for 30min until golden brown
  26. Let cool
