    INGREDIENTS


  • Broccoli icon

    375 g (about 1)florets of

    500 g (about 2 ¾)

    1 tablespoon (about 13.65 g)

    METHOD


  • 1. Add water and salt to a clean saucepan
  • 2. Heat until boiling
  • 3. Add broccoli to the saucepan
  • 4. Cook quickly - approx 2 min
  • 5. Drain
  • 6. Pat dry with paper towels
  • 7. Add steak to a clean work surface
  • 8. Rub in extra virgin olive oil the meat
  • 9. Season with salt & pepper
  • 10. Pre-heat a clean medium cast iron skillet - high heat
  • 11. Transfer meat to medium cast iron skillet
  • 12. Sear each side until browned - approx 2 min
  • 13. Remove and let cool - approx 5 min
  • 14. Transfer meat to work surface
  • 15. Slice thinly
  • 16. Add bread slices to the medium cast iron skillet
  • 17. Toast then set aside
  • 18. Add extra virgin olive oil, garlic clove and fresh chili to a clean frying pan
  • 19. Fry - approx 1 min, high heat
  • 20. Transfer drained broccoli to the oil mixture
  • 21. Fry - approx 1 min, high heat
  • 22. Stir balsamic vinegar into the frying pan then reduce heat
  • 23. Transfer broccoli to large mixing bowl
  • 24. Transfer meat to large mixing bowl
  • 25. Toss with arugula
  • 26. Assemble by topping each toast piece with some of the steak and broccoli mixture
