  1. Prep and set aside potato: rinsed & sliced
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside black pepper: coarse
  4. Prep and set aside tonic water: chilled
  5. Prep and set aside squid: sliced
  6. Get a clean large mixing bowl
  7. Add prepared potato
  8. Add olive oil
  9. Add salt & pepper
  10. Toss with slotted spoon until combined
  11. Transfer potatoes to baking sheet
  12. Cook for approx 25min until light golden while stirring occasionally
  13. Get a clean medium bowl
  14. Add prepared garlic clove
  15. Add mayonnaise
  16. Mix with tablespoon then set aside
  17. Get a clean saucepan
  18. Add vegetable oil
  19. Heat
  20. Get a clean large mixing bowl
  21. Add all purpose flour
  22. Add cornflour
  23. Add prepared black pepper
  24. Add chili flakes
  25. Add sea salt
  26. Pour prepared tonic water quickly
  27. Dip prepared squid quickly
  28. Fry until light golden
  29. Remove saucepan gently with slotted spoon
  30. Pat dry with paper towels
  31. Serve
  32. Garnish with lemon
