Method
1. Add quick-rise yeast, salt and all purpose flour to a clean large mixing bowl
2. Whisk until combined
3. Add water and beat vigorously - approx 1 min
4. Add olive oil and stir until combined
5. Add all purpose flour and stir carefully until dough forms
6. Turn out on lightly-floured surface
7. Knead until elastic - 8 min
8. Cover loosely with kitchen towel
9. Let rest - 10 min
10. Pre-heat oven - 190°C
11. Grease the clean baking sheets lightly with olive oil
12. Divide dough evenly and shape into thin sticks
13. Transfer dough to 2 baking sheets
14. Sprinkle with poppy seeds
15. Bake until golden brown - 20 min, 190°C
16. Transfer onto cooling rack
