Step preview

  1. Prep and set aside canned chickpeas: rinsed & drained
  2. Prep and set aside red onion: coarsely chopped
  3. Prep and set aside garlic clove: chopped
  4. Prep and set aside fresh chili: deseeded
  5. Prep and set aside carrot: coarsely grated
  6. Prep and set aside fresh beet: coarsely grated
  7. Prep and set aside mint: chopped
  8. Prep and set aside garlic clove: crushed
  9. Get a clean food processor bowl
  10. Add prepared canned chickpeas
  11. Add prepared red onion
  12. Add prepared garlic clove
  13. Add prepared fresh chili
  14. Add ground cumin
  15. Add ground coriander
  16. Add fresh parsley
  17. Add salt & pepper
  18. Blend until coarse crumbs form
  19. Shape into balls then set aside
  20. Get a clean medium bowl
  21. Add prepared carrot
  22. Add prepared fresh beet
  23. Add baby spinach
  24. Add lemon juice
  25. Add olive oil
  26. Season
  27. Stir well
  28. Get a clean small bowl
  29. Add greek yogurt
  30. Mix in prepared mint
  31. Mix in prepared garlic clove
  32. Season
  33. Get a clean frying pan
  34. Add olive oil
  35. Heat on medium-high heat
  36. Transfer balls to frying pan
  37. Fry each side in frying pan for approx 4min until golden brown
  38. Serve
