A light-as-air meringue, dressed up here with whipped cream, roasted kiwi fruit, and pistachios... use any seasonal fruits! Make in advance for an easy dinner party dessert.

    INGREDIENTS


  • Cornstarch icon

    250 g (about 1 ¼ cups)

    METHOD


  • 1. Pre-heat oven - 150°C
  • 2. Prepare a clean baking sheet with parchment paper
  • 3. Add cornstarch, vanilla extract and white vinegar to a clean small bowl
  • 4. Add superfine sugar to a clean small bowl
  • 5. Add egg white to a clean large mixing bowl
  • 6. Whisk until stiff peaks form
  • 7. Mix sugar mixture into meringue gradually
  • 8. Mix in mixture to meringue
  • 9. Transfer meringue to baking sheet
  • 10. Bake - 50 min
  • 11. Let cool
  • 12. Garnish
