These gently spiced lentils are full of flavour. Served over leaves, this makes a tasty lunchtime salad or side dish. Apple and beetroot add sweetness and crunch, while the zingy yogurt dressing adds freshness. Any leftover dressing would be delicious with lamb.

  1. Prep and set aside red onion: finely sliced
  2. Prep and set aside garlic clove: chopped
  3. Prep and set aside puy lentils: cooked
  4. Prep and set aside mint: chopped
  5. Prep and set aside fresh beet: peeled & coarsely grated
  6. Prep and set aside granny smith apple: peeled & coarsely grated
  7. Get a clean frying pan
  8. Add olive oil
  9. Heat on medium heat
  10. Add prepared red onion
  11. Fry for approx 8min until golden brown
  12. Add prepared garlic clove
  13. Add cumin seeds
  14. Cook for approx 5min
  15. Get a clean large mixing bowl
  16. Add prepared puy lentils
  17. Transfer onion mixture to large mixing bowl
  18. Add salt & pepper
  19. Set aside and let cool
  20. Get a clean small bowl
  21. Add greek yogurt
  22. Add lemon juice
  23. Add ground cumin
  24. Add prepared mint
  25. Mix together
  26. Get a clean serving plate
  27. Add arugula
  28. Transfer content of large mixing bowl to serving plate
  29. Add prepared fresh beet
  30. Add prepared granny smith apple
  31. Spoon dressing into serving plate
  32. Add lemon juice
  33. Serve
