This zingy marinade is a moreish combination that works perfectly with chicken. Marinade the chicken overnight to allow the chicken to tenderise and the flavours to meld. Be sure to pre-soak the skewers in water before grilling. These tasty skewers make perfect party food or pop them on the BBQ in the summer. Serve with lime wedges and peanut sauce for dipping.

  1. Prep and set aside lime: juice of

  3. Prep and set aside chicken breast: cubed
  4. Get a clean large mixing bowl
  5. Add smooth peanut butter
  6. Add soy sauce
  7. Add prepared lime
  8. Add curry powder
  9. Add prepared garlic clove
  10. Add hot pepper sauce
  11. Mix together
  12. Add prepared chicken breast and cover
  13. Marinate overnight in fridge for approx 8h
  14. Pre-heat on high heat
  15. Prepare a baking pan with foil
  16. Assemble chicken
  17. Transfer chicken to baking pan
  18. Broil each side for approx 5min
  19. Serve
