  1. Prep and set aside parmesan cheese: grated
  2. Prep and set aside lemon: zested & juiced
  3. Prep and set aside avocado: peeled, stoned & chopped
  4. Prep and set aside chicken breast: cooked & sliced
  5. Get a clean food processor bowl
  6. Add crème fraîche
  7. Add drained anchovies
  8. Add prepared parmesan cheese
  9. Add prepared lemon
  10. Blend until smooth
  11. Season with freshly ground black pepper to taste
  12. Get a clean large mixing bowl
  13. Add torn romaine lettuce hearts
  14. Add prepared avocado
  15. Pour dressing into salad
  16. Toss together
  17. Divide salad between 4 medium bowls evenly
  18. Arrange prepared chicken breast on top of
  19. Scatter croutons
  20. Season
  21. Sprinkle with grated parmesan cheese
  22. Serve immediately
