  1. Prep and set aside potato: peeled & halved
  2. Prep and set aside lemon: zest of
  3. Prep and set aside parmesan cheese: finely grated
  4. Prep and set aside tomato: coarsely chopped
  5. Prep and set aside capers: drained & rinsed
  6. Get a clean large saucepan
  7. Add water
  8. Add salt
  9. Boil
  10. Add prepared potato
  11. Cook for 20min until soft and continue
  12. Get a clean small bowl
  13. Add breadcrumbs
  14. Add dried oregano
  15. Add garlic powder
  16. Add prepared lemon
  17. Add prepared parmesan cheese
  18. Mix together with tablespoon
  19. Transfer mixture to plate
  20. Get a clean small bowl
  21. Add egg
  22. Beat
  23. Prepare a work surface with plastic wrap
  24. Place boned, skinned chicken breast
  25. Cover with plastic wrap
  26. Flatten
  27. Dip chicken into egg mixture
  28. Coat crumbs
  29. Get a clean frying pan
  30. Add olive oil
  31. Cook each side for approx 3min on medium-high heat until golden brown
  32. Transfer chicken to serving plate
  33. Keep warm
  34. Retrieve frying pan
  35. Heat frying pan on medium heat
  36. Add butter
  37. Mix in prepared tomato
  38. Mix in prepared capers
  39. Add white wine
  40. Season with salt & pepper
  41. Simmer for approx 2min and continue
  42. Drain potatoes
  43. Return
  44. Add lemon juice
  45. Add butter
  46. Season generously
  47. Mash with potato masher
  48. Transfer potatoes to serving plate
  49. Retrieve frying pan
  50. Add arugula
  51. Stir quickly
  52. Serve
  53. Yum!
