    METHOD


  • 1. Add cod fillet to a clean large mixing bowl
  • 2. Season with paprika, salt, black pepper and cayenne pepper
  • 3. Toss gently until coated
  • 4. Add peanut oil to a clean frying pan
  • 5. Heat in frying pan - medium heat
  • 6. Transfer fish to frying pan
  • 7. Cook until just cooked - approx 3 min, medium heat
  • 8. Drizzle with lime juice
  • 9. Assemble flour tortilla with a clean serving plate
  • 10. Add romaine lettuce hearts to the tortillas
  • 11. Add content of frying pan to tortillas
  • 12. Garnish with cilantro
  • 13. Serve immediately
  • 14. Serve with avocado and tomato salsa
