  2. Get a clean large mixing bowl
  3. Add halved eggplant
  4. Sprinkle with salt generously
  5. Let rest for 20min
  6. Rinse with water
  7. Add minced garlic clove
  8. Add olive oil
  9. Add cumin seeds
  10. Add coriander seeds
  11. Toss together until covered
  12. Transfer vegetables to baking sheet
  13. Roast for 30min until soft
  14. Let cool
  15. Get a clean large mixing bowl
  16. Add tahini
  17. Add olive oil
  18. Add minced garlic clove
  19. Add juice of lemon
  20. Add ground cumin
  21. Transfer roasted vegetables to purée
  22. Blend until smooth
  23. Season to taste
