  1. Prep and set aside red onion: peeled & quartered
  2. Prep and set aside red bell pepper: seeded & quartered
  3. Prep and set aside yellow bell pepper: seeded & quartered
  4. Prep and set aside fresh thyme: destalked
  5. Prep and set aside eggplant: trimmed & cubed - 2 cm
  6. Prep and set aside zucchini: trimmed & cubed - 2 cm
  7. Fit thick slicing disc (5) to direct prep attachment
  8. Fit direct prep attachment to kCook Multi
  9. Fit stir tool to kCook bowl
  10. Add olive oil to the kCook bowl
  11. Fit kCook bowl to kCook Multi
  12. Attach lid to kCook bowl
  13. Heat for 1min 30s with filler cap removed
  14. Turn direct prep attachment to position 1
  15. Add peeled, crushed garlic clove with direct prep attachment
  16. Slice prepared red onion with direct prep attachment
  17. Slice prepared red bell pepper with direct prep attachment
  18. Slice prepared yellow bell pepper with direct prep attachment
  19. Turn direct prep attachment to position 2
  20. Add prepared fresh thyme
  21. Cook for 10min with filler cap fitted
  22. Add prepared eggplant
  23. Add prepared zucchini
  24. Add bay leaves
  25. Add canned chopped tomatoes
  26. Add salt & pepper
  27. Cook for 15min with filler cap fitted
  28. Serve
  29. Garnish with fresh basil
